A Great Winter Drink; Amanda's Hot Chocolate

When you think of great hot chocolate, what states come to mind? Minnesota, New Hampshire, South Dakota?

But, when it come to food and drink, never underestimate the Cajuns of South Louisiana. They could make your car taste good.

Among the top hot chocolate makers I know is Amanda, a busy university administrator and mother of two young children. Here is the recipe she uses to make hot chocolate mix for her family and the lucky families with whom she shares it.

Put ten cups of dry powdered milk in a large bowl.

Add 2 1/2 cups of Coffee-Mate or a similar product.

Mix in 18 ounces of Nestle's cocoa mix.

Add 1 1/4 cups of powdered sugar, and mix everything together thoroughly.

Amanda suggests that you immediately try a cup of the cocoa to determine whether you might want to add a bit more of something. Just put two heaping teaspoons of the hot chocolate mixture in a cup of hot water. You'll love it as is, but you may want to add a bit more chocolate or sugar.
